Olive oil and avocados are a rich source of monounsaturated fats that are good for your heart and help to balance out cholesterol levels in the body. As well as being high in calcium, zinc, selenium, magnesium, folate, vitamin C and vitamin B, this salad is also rich in folate, which helps to break down the amino acid homocysteine in the blood: high levels of which are a risk factor for heart disease. 


  • 1 tbsp pumpkin seeds
  • 100g wild rocket
  • 1 large avocado, peeled and cubed
  • 125g cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 180g cooked king prawns
  • 1 tbsp extra virgin olive oil
  • ½ lemon, juiced
  • Salt, to season
  • Black pepper, to season


  1. Toast seeds in a dry pan

  2. Combine vegetables and prawns in a large bowl then add the seeds once they have cooled

  3. Dress the salad with olive oil and lemon juice then season

  4. Divide the salad between two and serve

Serves: 2
