Ingredients

  • 120ml coconut oil, melted
  • 225g light brown sugar
  • 3 tbsp peanut butter
  • 3 eggs
  • 225g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp vanilla
  • 2 ripe banana, mashed
  • 150ml whole milk mixed with 2 sachets of Healthspan YoGo MultiVitality Natural
Makes 16 slices

 

Method

  1. Preheat oven to 180C / 160 C fan.
  2. Grease a 20cm square tin with a little oil.
  3. Pour the oil into a large bowl. Add the sugar and whisk for a few minutes until thoroughly combined.
  4. Add the eggs, one by one, whisking thoroughly after each addition.
  5. Fold the flour, cinnamon and ginger and then add the mashed bananas, YoGo and milk mixture and vanilla and stir until just combined.
  6. Pour the mixture into the lined loaf tin, smooth the top with a spatula and then place the two halves of banana on top of the loaf for decoration
  7. Bake for 1 hour, or until the cake is well risen and golden. To check if the cake is done, insert a skewer into the centre of the cake - it should come out clean.
  8. If the cake is not quite ready yet, place it back into the oven for a little longer; about 10-15 minutes.
  9. Leave the cake in the tin to cool, then turn out and cut into slices.
  10. Dust with icing sugar if you wish.
