Enjoy your Healthspan Better Cookie in a different way by making it into a tartlet base. Fortified with B vitamins, sweet, indulgent and delicious; this is a new way to increase your protein intake without compromising your healthy lifestyle.



Ingredients

Makes 1
  • 1 Healthspan lemon protein cookie
  • 1 tbsp coconut oil
  • 50g coconut yoghurt
  • 1/2 vanilla bean paste
  • Zest of 1 lemon
  • 1 tbsp elderflower cordial
  • 50g strawberries, sliced
  • Icing sugar, to serve

 

Method

  1. Place the cookie in the bowl of a food processor and blitz to a fine crumb. Drizzle in the coconut oil to form a sticky crumb.
  2. Press the mixture into a tartlet tin and place into the fridge for 1 hour to set,
  3. When ready to assemble, mix together the coconut yoghurt, vanilla and lemon zest in one bowl and mix together the strawberries and elderflower cordial in a second bowl.
  4. Spoon the yoghurt into the cookie tart case and top with the strawberries.
  5. Dust with icing sugar just before serving.
