Ingredients
- 1 medium carrot, peeled and grated
- 15g raisins
- 15g walnuts, lightly crushed
- 5g poppy seeds
- Pinch of sea salt (optional)
- Squeeze of lemon juice (optional)
Method
- Place the grated carrot in a bowl.
- Add the raisins, crushed walnuts and poppy seeds. Season with a tiny pinch of salt and a squeeze of lemon if you like.
- Toss gently to combine and serve immediately.
Serving & storage
Tip: Eat fresh for crunch. If making ahead, keep the nuts separate and add just before serving to maintain texture.
