Chewy date-and-almond bliss balls rolled in coconut with a hint of sea salt — a no-bake, make-ahead treat with salted-caramel vibes.

Ingredients
- 150g soft pitted dates (Medjool or soaked Deglet Noor)
- 2 tbsp almond butter (or peanut butter)
- 1 tsp vanilla extract
- Pinch of fine sea salt
- 25g desiccated coconut, plus extra for rolling
Method
- Blend the dates, almond butter, vanilla and salt in a food processor to a sticky paste.
- Add the desiccated coconut and pulse to combine.
- Roll the mixture into 8 even balls (lightly oil your hands if sticky), then roll in extra coconut.
- Chill for 20–30 minutes to firm up before serving.
Serving & storage
Tip: Store in an airtight container in the fridge for up to 5 days, or freeze for up to 1 month. Sprinkle with a tiny pinch of flaky salt to serve for extra “caramel” pop.
